About the Recipe

Introducing the Filipino classic, Sago Gulaman! This iconic beverage brings together the delightful chewiness of tapioca pearls (sago) and the refreshing jelly-like texture of agar-agar (gulaman) in a sweet and cooling drink. Perfect for sipping on a warm day or as a delightful dessert, Sago Gulaman offers a taste of traditional Filipino flavors in every refreshing sip.

Ingredients

  • Ingredients:

    • 1/2 cup sago pearls (tapioca pearls)

    • 1/2 cup gulaman (agar-agar) bars, chopped into small cubes

    • 6 cups water

    • 1/2 cup brown sugar (adjust to taste)

    • 1 teaspoon vanilla extract (optional)

    • Ice cubes (for serving)

Preparation

  • Instructions:

    1. Prepare the Sago (Tapioca Pearls): Bring a pot of water to boil. Add the sago pearls and cook for about 10-15 minutes or until translucent, stirring occasionally to prevent sticking. Once cooked, drain and rinse the sago pearls under cold water to stop the cooking process. Set aside.

    2. Prepare the Gulaman (Agar-Agar): In a separate pot, bring 4 cups of water to a boil. Add the chopped gulaman bars and stir until dissolved. Reduce heat and let it simmer for about 5 minutes. Add the brown sugar and vanilla extract (if using), stirring until fully dissolved. Turn off the heat and let the mixture cool and set for about 30-40 minutes.

    3. Combine: Once the gulaman mixture has set, cut it into small cubes. In a large pitcher, combine the cooked sago pearls and gulaman cubes.

    4. Assemble the Drink: To serve, scoop a portion of the sago and gulaman mixture into a glass. Add ice cubes, then pour water to fill the glass. Stir gently to combine all ingredients.

    5. Enjoy: Serve the Sago Gulaman chilled and enjoy the refreshing taste of this Filipino favorite!
