4 large eggs, separated
1 cup mashed cooked ube (purple yam)
1/2 cup milk
1/4 teaspoon violet food coloring (optional)
1 teaspoon vanilla extract
For the Frosting:
1 1/2 cups heavy cream
1 cup sweetened condensed milk
1 cup mashed cooked ube (purple yam)
1/2 cup unsalted butter, softened
Preparation
Procedure:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a bowl, sift together the flour, baking powder, and salt. Set aside.
In another bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolks one at a time, then stir in the mashed ube.
Mix in the flour mixture alternately with the milk, starting and ending with the flour mixture. Stir in the violet food coloring and vanilla extract.
In a separate clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter.
Divide the batter evenly between the prepared cake pans.
Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
For the Frosting:
In a mixing bowl, whip the heavy cream until stiff peaks form.
In another bowl, beat together the mashed ube and softened butter until well combined.
Gradually add the sweetened condensed milk to the ube mixture, mixing until smooth.
Gently fold the whipped cream into the ube mixture until well combined.
Once the cakes have cooled completely, spread a layer of frosting on top of one cake layer. Place the second cake layer on top and frost the top and sides of the cake.
