1 kg beef (preferably cuts like brisket or chuck), cut into serving pieces
1 cup peanut butter (unsweetened and preferably natural)
1 large eggplant, sliced
1 bundle string beans (sitaw), cut into 2-inch lengths
1 banana blossom (puso ng saging), sliced and soaked in water with a bit of salt or vinegar
1 bunch bok choy (pechay)
1 medium-sized onion, chopped
4 cloves garlic, minced
4 tablespoons cooking oil
4 cups water or beef broth
Salt and pepper to taste
Shrimp paste (bagoong) for serving
Preparation
Instructions:
In a large pot, heat cooking oil over medium heat. Sauté garlic and onions until fragrant.
Add the beef pieces and cook until browned on all sides.
Pour in water or beef broth and bring to a boil. Simmer over low heat until the beef is tender, about 1.5 to 2 hours. You can also use a pressure cooker to speed up the cooking process.
Once the beef is tender, add the peanut butter to the pot. Stir until well combined.
Add the eggplant, string beans, and banana blossom. Simmer until the vegetables are cooked but still crisp.
Season with salt and pepper to taste.
Add the bok choy and cook for another minute until wilted.
Serve hot with shrimp paste on the side and steamed rice.
