Ingredients

Ingredients:

  • 500g boneless, skinless chicken breasts, cut into bite-sized pieces

  • 2 tablespoons olive oil

  • 1 large onion, finely chopped

  • 3 cloves garlic, minced

  • 1-inch piece of ginger, grated

  • 2 tomatoes, diced

  • 1 cup coconut milk

  • 2 tablespoons curry powder

  • 1 teaspoon ground turmeric

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1 teaspoon paprika

  • Salt and pepper to taste

  • Fresh cilantro leaves for garnish

  • Cooked rice or naan bread for serving



Preparation

Instructions:

  1. Heat olive oil in a large skillet or Dutch oven over medium heat. Add chopped onion and sauté until soft and translucent, about 5 minutes.

  2. Add minced garlic and grated ginger to the skillet and cook for another 2 minutes, stirring frequently to prevent burning.

  3. Add diced tomatoes to the skillet and cook until they start to break down and release their juices, about 5 minutes.

  4. Push the tomato mixture to one side of the skillet and add the chicken pieces to the other side. Season chicken with salt and pepper, and cook until browned on all sides, about 5-7 minutes.

  5. Once the chicken is browned, mix it with the tomato mixture in the skillet. Add curry powder, ground turmeric, ground cumin, ground coriander, and paprika to the skillet, stirring well to coat the chicken and vegetables with the spices.

  6. Pour coconut milk into the skillet, stirring to combine all the ingredients. Bring the mixture to a simmer, then reduce heat to low and let it cook for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.

  7. Taste the curry and adjust seasoning with salt and pepper if needed. If you prefer a spicier curry, you can add a pinch of chili powder or red pepper flakes at this point.

  8. Once the chicken curry is cooked to your liking, remove it from heat and garnish with fresh cilantro leaves.

  9. Serve hot with cooked rice or naan bread, and enjoy the delicious and nutritious chicken curry!
