The health benefits of Sinigang na Bangus are another reason for its popularity.

Ingredients

Ingredients:

  • 1 medium-sized bangus (milkfish), cleaned and sliced into serving pieces

  • 8 cups water

  • 1 medium onion, quartered

  • 2 medium tomatoes, quartered

  • 1 radish (labanos), sliced into thin rounds

  • 1 bunch kangkong (water spinach), leaves and tender stems separated

  • 10-12 pieces sitaw (string beans), cut into 2-inch lengths

  • 1 small eggplant, sliced

  • 2-3 pieces green chili peppers (optional)

  • 1 packet (about 40g) sinigang sa sampalok mix (tamarind soup base)

  • Salt and fish sauce to taste



Preparation

Instructions:

  1. Prepare the broth:

    • In a large pot, bring 8 cups of water to a boil.

    • Add the onions and tomatoes. Let it simmer for about 5 minutes until the vegetables are soft.

  2. Add the bangus:

    • Add the bangus pieces to the pot and let it cook for about 10 minutes on medium heat.

  3. Add the vegetables:

    • Start by adding the radish and let it cook for 3-5 minutes.

    • Add the sitaw and eggplant. Continue to simmer until the vegetables are tender, around 5-7 minutes.

  4. Season the soup:

    • Pour in the sinigang mix and stir until it is fully dissolved.

    • Add the green chili peppers, if using, and let the soup simmer for another 2 minutes.

  5. Finish with kangkong:

    • Add the kangkong leaves and tender stems, then turn off the heat. Let the residual heat cook the greens for about 2 minutes.

  6. Adjust seasoning:

    • Taste the soup and adjust the seasoning with salt or fish sauce as needed.

  7. Serve:

    • Serve hot with steamed rice.
