Ingredients
Ingredients:
1 medium-sized bangus (milkfish), cleaned and sliced into serving pieces
8 cups water
1 medium onion, quartered
2 medium tomatoes, quartered
1 radish (labanos), sliced into thin rounds
1 bunch kangkong (water spinach), leaves and tender stems separated
10-12 pieces sitaw (string beans), cut into 2-inch lengths
1 small eggplant, sliced
2-3 pieces green chili peppers (optional)
1 packet (about 40g) sinigang sa sampalok mix (tamarind soup base)
Salt and fish sauce to taste
Preparation
Instructions:
Prepare the broth:
In a large pot, bring 8 cups of water to a boil.
Add the onions and tomatoes. Let it simmer for about 5 minutes until the vegetables are soft.
Add the bangus:
Add the bangus pieces to the pot and let it cook for about 10 minutes on medium heat.
Add the vegetables:
Start by adding the radish and let it cook for 3-5 minutes.
Add the sitaw and eggplant. Continue to simmer until the vegetables are tender, around 5-7 minutes.
Season the soup:
Pour in the sinigang mix and stir until it is fully dissolved.
Add the green chili peppers, if using, and let the soup simmer for another 2 minutes.
Finish with kangkong:
Add the kangkong leaves and tender stems, then turn off the heat. Let the residual heat cook the greens for about 2 minutes.
Adjust seasoning:
Taste the soup and adjust the seasoning with salt or fish sauce as needed.
Serve:
Serve hot with steamed rice.
